New resolution for the year – stopping buying breakfast and making it myself!
I used to be so good at making my own breakfast, lunch and coffee for work, and that always very much satisfied me. Last year (2018) was so out of my routine that I have spent to much money buying food out! You probably know as much as I do, that it is so easy in London to buy some good quality food to take away EVERYWHERE!
But this year, starting as a self employed lady, I have no excuses of travelling for work or to the tent, not to cook up a storm for breakfast and lunch. Challenge accepted, starting with making my own granola again. It is easy, vegan, and will keep you full until lunch 🙂
The recipe will only take you 5 min to prepare, and about 10min to bake, only needing one pot and a jar to keep your homemade granola. Easy right?
Quantity: For 500g of Granola

Ingredients
- 4 cups of oats
- 1 and 1/2 cups of mixed nuts ( pumpkin seeds, flax seeds, sunflower seeds, cashew nuts, hazelnuts etc …)
- 1/2 cup of dried apricots
- 1/2 cup of coconut oil
- 1/2 cup of honey or agave syrup to make it vegan
Pre heat oven at 180C Fan
1* Mix the ingredients: Apart form the dried apricots, mix all of the ingredients in a big bowl. I would advise to use your cleaned hands, easier, quicker and nice.
2* Bake: bake for 5 min (check if it is not baking too quickly ) then using a Woden spoon, mix the granola and bake again for another 10min.
3* Assemble: Finally add the dried apricots.
Keep for a month in a glass jar and eat with any type of milk, yogurt or to top up some thick smoothies or açai bowls.
