Valentine’s Special – The best chocolate cake

 

I hope you have had a wonderful Valentine’s Day! It was a very busy week last week for me, but a good week! Also, I got to launch my Youtube channel which was super exciting! To celebrate its launch, I made this cake again, and organised a Giveaway on my Instagram to offer it to a lucky one 🙂 I went to deliver it on Valentine’s Day before I myself had my Valentine night.

I am excited to share more savoury dishes, simple and easy french inspired food, that my mum, grandma or friends would make at home. I am always a partisan of good fresh ingredients, for delicious and nutritious lunch or dinners; from starters, to main, including apetizers and of course desserts!

Quantity: For a 6 inch cake

Ingredients

For the chocolate sponge

  • 400g of plain flour
  • 530g of caster sugar
  • 120g of unsweet cacao
  • 15g of baking soda
  • 13g of baking powder
  • 10g of salt
  • 210g of vegetable oil
  • 130 ml of cold coffee
  • 400g of buttermilk
  • 4 large eggs

For the Italian buttercream

  • 300g of caster sugar
  • 100g of water
  • 300g of unsalted butter
  • 6 egg whites
  • 2 tbsp of unsweet cacao powder
  • natural pink colorant

Method

1* Make the sponges: In a bowl, mix all of the dry ingredients – flour, sugar, salt, baking powder, baking soda and cacao. In another bowl, mix the wet ingredients – vegetable oil, buttermilk, cold coffee and eggs. Mix the wet ingredients to the dry, and mix well.

2* Bake the sponges: Divide the batter in 3 tins ( 6/7 inches ) and cook at 180C for 35 to 40 min.

3* Make the Italian meringue: In a pan, bring the water and sugar at 110C. Start to mix the egg whites until soft picks form. Slowly add the sugar syrup to the mixing bowl, and let it mix and cool for 10 min.

4* Finish the buttercream: Change to paddle attachment, and slowly add the butter. Keep 1 tbp of buttercream in a bowl and another 2 tbp in another bowl. Then add the cacao to the rest of the buttercream.
