My 2 easy cookie recipes

Cookies. Simplest of things, but so hard to get right! I like them with a crisp shell but soft in the inside, and undercooked. I eat a quarter of the dough raw and whatever is left becomes baked delicious cookies.

I am not ashamed to say the first ever cookies I fell in love with were not “homemade” and made by a bakery chain in France 😀 (And not going to lie that I still do sometimes buy some)! Then I tasted and baked a fair amount of cookies to finally come to a conclusion that my 2 favourites were:

  • Dark chocolate thick chunk with sea salt
  • Oatmeal apple spiced

And today I am sharing both recipes i have tried and tasted for you, and you can let me know what you think!

Dark chocolate and sea salt cookies

Quantity: 12 big cookies (or 24 small cookies)

Difficulty

Ingredients

  • 300g of chocolate chips ( dark chocolate – the bigger the chunks the better!)
  • 200g of light brown sugar
  • 190g of plain flour
  • 450g of salted butter at room temperature
  • 4 medium eggs
  • 1 tsp of sea salt

Method

1* Make the dough: in the bowl of an electric mixer with the paddle attachment, add the chocolate chips, sugar, flour, sea salt, butter and then eggs. Mix on medium speed for 1 minute.

2* Prepare the cookies: Lay some reusable baking sheets on a baking tray, and form balls the size of 2 table spoons and lay them not too close to each others ( they will spread by half). This is at this point you can eat the raw dough 😉

3* Bake the cookies: Keep them in the fridge until you pre heat your oven at 180 degrees. Bake for 10min and leave to cool for 5 min and then put on a cooling rack.

Oatmeal spiced apple cookies

Quantity: 12 big cookies (or 24 small cookies)

Difficulty

  • 100g of raisins
  • 300g of plain rolled oats
  • 200g of light brown sugar
  • 100g of plain flour
  • 450g of salted butter at room temperature
  • 2 medium apples diced
  • 4 medium eggs
  • 1 tsp of sea salt
  • 1 tbs of cinnamon
  • 1 tbs of vanilla extract
  • 1tsp of nutmeg
  • 1/2 tsp of salt

Method

1* Make the dough: in the bowl of an electric mixer with the paddle attachment, add the raisins, rolled oat, sugar, flour, salt, vanilla extract, cinnamon, nutmeg, butter, apples and then eggs. Mix on medium speed for 1 minute.

2* Prepare the cookies: Lay some reusable baking sheets on a baking tray, and form balls the size of 2 table spoons and lay them not too close to each others ( they will spread by half).

3* Bake the cookies: Keep them in the fridge until you pre heat your oven at 180 degrees. Bake for 12min and leave to cool for 5 min and then put on a cooling rack.

    Hi I couldn’t find the apples in the apple spiced cookies! 😂

      Oppsy! I guess I forgotten to write it ha ha! You cut them in dice and up, in the batter with the rest! I’ll modify it and thank you for picking this up! Manon xx
